This Rainbow Truffles Recipe is the perfect no-bake treat for rainbow lovers! Made with cake mix & cream cheese, they’re easy & so tasty too! Make them for parties, St. Patrick’s Day & more.

Do you love rainbow foods? I LOVE rainbows – they make me happy. So when I can add them to things like my food – heck yeah, I’m all over it!

Each year around St. Patrick’s Day I get the gumption to make rainbow goodies and this year I had the idea to make this rainbow truffles recipe.

Now, I have seen a lot of different truffle recipes out there that include more than one color. Those are usually more like a cake pop – requiring that the cake mix be made, then tinted with colors and then baked into cake.

At that time the colored cakes are then mixed with the frosting and made into truffles. But really – if you are using baked cake, it’s a cake pop, not a truffle.

So I got in the kitchen and started experimenting. Fortunately, my first idea of combining cake mix (just the dry mix) and cream cheese mixed together worked out.

It was entirely experimental and I have to say they turned out GREAT! I’m swooning over those vibrant colors all put together. You think you are getting a white chocolate truffle and then you bite in for a colorful surprise!

Here are some commonly asked questions

Do I really have to chill the dough?

It is imperative that the mixture is chilled for at least 1 hour & that the finished truffles stay chilled. Not only is it important to keep the cream cheese chilled for food safety, but the cake mix/cream cheese mixture will expand as it warms to room temperature.

If you have coated the truffles with the white chocolate layer, it will crack as the inside expands – ruining the truffles.

What are the best sprinkles for these truffles?

This is important – just because the package says “sprinkles” doesn’t necessarily mean that it is in-fact sprinkles.

I see a lot of people using colored sanding sugar that is labled as sprinkles.

This will not work as well because when that sugar gets wet – like when mixed into a moist dough or when placed in the refrigerator, it will sweat & the color will bleed out.

This recipe calls for a stand mixer. Can I also make this recipe by hand?

Yes. This recipe can easily be made by hand. However, keep in mind that this method will influence the overall time commitment.

Why didn’t my chocolate wafers melt correctly?

When your chocolate wafers become chunky rather than creamy, it is said that the chocolate seized. This is typically due to overheating or contact with water or steam.

In the first case, the chocolate is just burning from excess heat, but in the second case, there is a negative reaction between the chocolate (which is waxy and has many oils that are hydrophobic, or “water-fearing”) and the water, causing the components of the chocolate to separate.

Be sure to refer to the package directions when melting chocolate to prevent this from happening.

What is the best way to store rainbow truffles?

Because the mixture will expand as it warms up – these need to be kept refrigerated. Place them in an airtight container and refrigerate for up to 4 days.

HOW DO YOU MAKE Rainbow Truffles?

  1. Place the cream cheese in a large mixer bowl and beat on high for 1-2 minutes or until whipped and fluffy.
  2. Reduce the speed and stir in the cake mix until blended.
  3. Remove the beater, cover, and chill for at least 1 hour.
  4. Remove the chilled mixture and divide into 6 equal-sized pieces.
  5. Place 1 piece at a time back in the mixer bowl and add the food coloring. Mix well. Add as many drops as needed to achieve the desired shade. This will vary based on the variety and brand of the product. Rinse out the bowl after each color so you don’t mix the colors into each piece. I know this can be time-consuming – but you want the colors to stay true.
  6. Once you have all the colors created. Wrap them separately in plastic wrap and refrigerate for at least one hour.
  7. Once chilled, unwrap and pull off small pieces in the order of the rainbow and stack them on top of one another. (see photos of this process in the post) Red-Orange-Yellow-Green-Blue-Purple. I made all the stacks on a paper plate first then moved on to the next step.
  8. Once you have created a small stack of colors, gently press them together and then roll them between your hands to round out the shape. Place them back on the paper plate and chill in the freezer while you work on the remaining dough.

How do you coat the rainbow truffles with chocolate?

  1. Once all of the truffle insides have been made and are chilling in the freezer, place the candy melts in a microwave-safe bowl and heat at 50% power in 30-second increments. Stir in between each interval until the chocolate is melted and smooth. Take care to not overcook and seize the chocolate.
  2. Remove the frozen truffles from the freezer and then dip each one individually in the melted chocolate using a fork. Just drop it in, roll it around and then lift it out, tapping the edge of the bowl to drizzle off any excess chocolate. Place the coated truffles on a parchment-lined baking sheet or even a paper plate.
  3. Immediately add a pinch of sprinkles to the tops of each coated truffle before the chocolate hardens. This can happen fairly quickly since the truffles are frozen and the chocolate is warm – so work quickly.
  4. Once the coating has hardened, the truffles can be stacked in an airtight container.
  5. Keep refrigerated between servings.

To make Rainbow Truffles you will need…

  • cream cheese
  • white or vanilla cake mix
  • Food Color – in red, orange, yellow, green, blue & purple
  • white chocolate candy melts – opt

Can this recipe be doubled?

You bet! If you need more than 36 truffles, you can definitely double this recipe. You shouldn’t have any issues with it fitting in the mixer – just make sure you give yourself plenty of time as assembling that many truffles will be time-consuming.

Can rainbow truffles be frozen?

Yes – these rainbow truffles can be frozen. Just be sure to put them in an airtight container and then use them within 3 months.

How many drops of food color do I need?

I used AmeriColor Gel Paste Food Color in the quantities shown below (links further down in the post) – however it really depends on how vibrant you want the colors to be. If you are making unicorn rainbows you might want to use pastel rainbow colors or less of the colors I have mentioned here.

  • 2-3 drops – Super Red
  • 2-4 drops – Electric Orange
  • 1-3 drops – Electric Yellow
  • 2-3 drops – Electric Green
  • 1-2 drops – Electric Blue
  • 2-4 drops – Electric Purple
